Even more so than wine, sake can be served at an array of temperatures. Storage is also paramount. Our space uses special @subzeroandwolf refrigerators that control the temperature for unpasteurized (nama) bottles. The entire space is temperature controlled throughout the shop to protect even the twice pasteurized sake meant to withstand more exposure to the elements.
